When I head to the kitchen, I don’t always know what will happen. Yesterday, this delicious Vanilla Cake in a Mug recipe happened. I love it when something delicious…and easy…happens! It was so tasty I had it for my S breakfast this morning. In case you’re wondering, an “S” breakfast is one with lots of good, healthy fats and very few carbs. I’ve been a very happy and successful Trim… Continue Reading
**Updated Recipe! Use your THM Baking Blend! Or Make a Dozen in the Oven!** Biscuits. Oh how I love biscuits! Unfortunately, they don’t love me back. I’ve been eating gluten free for several years now and eventually you kind of get over wanting bread, for the most part. Every now and then you really crave it. The great thing about Trim Healthy Mama is that you can find tons of great… Continue Reading
Yesterday, I wrote about repurposing…or Making Do With What We Have. Ironically, that’s just what I had to do when making supper later. The result is this deliciously easy Spaghetti Soup! Wait…it’s hot and humid out (or so I hear), why on earth am I making soup? Well, because when I went to make spaghetti sauce, for some reason I grabbed the tomato juice from my pantry instead of… Continue Reading
My daughter has not been feeling well for some time. We’ve taken her to the doctor, have had tests done, and according to them she is just fine. Try telling her that! She doesn’t feel fine at all. We’ve been (mostly) gluten free for a few years now. I’ve left it up to her (she’s 15) whether or not she cheats at all, like at the occasional family get-together… Continue Reading
One of the best things about being on the Trim Healthy Mama plan is eating something that tastes like you’re cheating on your diet…but you’re not! I love the Cake in a Mug recipe in the Trim Healthy Mama book (on page 379 of the original plan book ). It is quick, easy and delicious. It’s so hard to believe that it’s a completely flourless chocolate cake and actually healthy!
One thing I love about leftover salmon filets is being able to make salmon patties the next day for lunch. I don’t mind using canned salmon for salmon patties if I have to, but using filets is so much better! I was looking for a way to make a grain free version and remembered that I had some cooked red quinoa in the fridge that needed to be used soon…. Continue Reading
Did you like my Sriracha Deviled Eggs? Let’s not stop there! Sriracha Egg Salad is great for when you want deviled eggs but don’t want to do all the work. Let’s face it, some days that’s just too much effort. Just bein’ real, folks. Life gets busy and crazy sometimes and we’ve got to go with the flow. That’s exactly how this Sriracha Egg Salad came about, actually. I mentioned… Continue Reading
Have you read the ingredients on a bottle of salad dressing lately? Holy cow…since when do you need over 20 ingredients for something as simple as a vinaigrette? Yikes! Especially if some of those ingredients are artificial colorings and preservatives. No thank you. I’ll make it myself, thank you very much.
To say the humble spaghetti squash has got me all excited is an understatement. One bite of this fabulous, low carb squash and I began to envision all kinds of ways to use it. Ways to replace your former high carb favorite foods (like pasta and potatoes) so you can still enjoy comfort foods without the glycemic payload delivered by pasta and potatoes. This Mock Baked Spaghetti is a comfort food you’re sure… Continue Reading
Kale and blueberry are some powerful foods. They’re also two of my favorites, so this Kale Blueberry Smoothie recipe from Homestead Mania caught my eye in last week’s link up. It’s super easy and on plan for Trim Healthy Mamas. You could also add a scoop of plan-approved whey protein powder to beef up the protein. A Kale Blueberry Smoothie is a great way to start your day! If you’d like… Continue Reading
