It’s been years since I’ve worked at a certain famous coffee chain found in airports, supermarkets, and street corners across the globe, but I’m quite thankful for what I learned about coffee while I worked there. This guacamole recipe is so easy to make! Seriously, it’s like three steps…easy peasy! One of my daughter’s friends taught her how to make it and we call it Lily’s Salsa. I love it for two reasons – one, it made my daughter love avocados, which are full of healthy goodness, and two…it’s crazy easy. Oh, and so delicious!

Meatballs, without breadcrumbs? Can you DO that?
Why yes, yes you can! And, as I discovered today when making these easy grain free venison meatballs, you don’t actually need anything to replace breadcrumbs if you have to eat gluten free. My husband thinks soup is a waste of time.
Consequently, I don’t eat it as often as I’d like. But today, with somewhere between 7-10 inches of heavy, wet snow in the forecast…well, I wanted some hot, comforting, soul-soothing soup for lunch. With a grilled cheese sandwich. So I threw together this Creamy Fire Roasted Tomato Soup and paired it with my favorite onion & curry seasoned Coconut Flour Flatbread. It took me back to my childhood…but with a bit of gourmet flair.
Have you ever been struck by a totally weird thought?
One night for supper, I was eating salmon. Out of nowhere, this crazy thought popped in my head – “Man, this salmon would be good with blueberries.” Salmon with blueberry sauce.
I’m not particularly fond of fish but I’ve really grown to like salmon.
Salmon with blueberry sauce? Fish…with blueberries? Certainly I had lost my mind. But the more I pondered it, the better it sounded. And I wished I had blueberries at that moment because I was making myself crave this strange combination. (more…)
I can’t be the only one who runs out of ingredients at the worst possible time, right?
Like when your baby boy turns eight. And requests chocolate zucchini cake. And you need to make it Trim Healthy Mama style because his behavior is better that way (and you can eat it too…). And you open the bag of Baking Blend to discover you just don’t have enough. And you need that cake pronto. Like, People Will Be Here In A Couple Hours pronto.

A Trim Healthy Mama Cookbook? It’s like Pinterest on your bookshelf!
I’ve seen many people asking “Do I really need the new Trim Healthy Mama cookbook? Is there anything new in it or is it the same recipes that were in the old book?” Need is always relative of course. Can you do the plan without the new cookbook? Sure (but it’s much more fun with it)!
Is there anything new in the cookbook?
Absolutely! The first book didn’t have recipes for GGMS (Good Girl Moon Shine) and several other beverage recipes that are wildly popular among the THM community. There’s also tons of crock pot meals, family and quick skillet recipes and soups, lots of breads (including new amazing recipes), desserts and even snacks and condiments – many of the recipes from the original book are there plus even more new recipes.

The other day, I had a craving for pesto.
When you need a pesto with no nuts and not cheese, should you even bother? No pine nuts. No cheese. Who does such craziness? Someone in the middle of a THM Challenge who needs a Deep S dish, that’s who. That would be me.
The good news is, I whipped up this Easy Spinach Basil Pesto in just a few minutes and it was, indeed good.
I put it on a chicken breast, fried in coconut oil.
I said Oh Sweet Mercy, this is good!
