One of the best things about being on the Trim Healthy Mama plan is eating something that tastes like you’re cheating on your diet…but you’re not! I love the Cake in a Mug recipe in the Trim Healthy Mama book (on page 379 of the original plan book ). It is quick, easy and delicious. It’s so hard to believe that it’s a completely flourless chocolate cake and actually healthy!

One thing my recent dietary changes has brought about is Learning To Like Foods I Always Thought I Hated. I’m broadening my food horizons these days. I’ve never been a big fan of squash necessarily, but this Savory Roasted Butternut Squash has me rethinking the I Don’t Like Squash thing I’ve claimed for so long. Because it’s really very good. And it’s good for you.
One thing I love about leftover salmon filets is being able to make salmon patties the next day for lunch. I don’t mind using canned salmon for salmon patties if I have to, but using filets is so much better!
