This Easy Wasa Pizza came about because I was craving pizza. It was getting close to bedtime, so it had to be easy. It had to fit in with the Trim Healthy Mama guidelines I am following, too, because… Confession: I love pizza. I could eat it every day. Seriously. Reality: the pizza I have loved all my life makes me fat. It’s unhealthy.
One of the best things about being on the Trim Healthy Mama plan is eating something that tastes like you’re cheating on your diet…but you’re not! I love the Cake in a Mug recipe in the Trim Healthy Mama book (on page 379 of the original plan book ). It is quick, easy and delicious. It’s so hard to believe that it’s a completely flourless chocolate cake and actually healthy!

One thing my recent dietary changes has brought about is Learning To Like Foods I Always Thought I Hated. I’m broadening my food horizons these days. I’ve never been a big fan of squash necessarily, but this Savory Roasted Butternut Squash has me rethinking the I Don’t Like Squash thing I’ve claimed for so long. Because it’s really very good. One thing I love about leftover salmon filets is being able to make salmon patties the next day for lunch.
