This guacamole recipe is so easy to make! Seriously, it’s like three steps…easy peasy! One of my daughter’s friends taught her how to make it and we call it Lily’s Salsa. I love it for two reasons – one, it made my daughter love avocados, which are full of healthy goodness, and two…it’s crazy easy. Oh, and so delicious!

I have a little clump of delightful onion-y chives growing right outside my bedroom window.
When their dark green shoots begin to emerge from that cold winter blanket of soil, it’s a sign of life returning to the land once again.
We also have hens in the backyard that give us delicious, healthy fresh eggs, hours of entertainment, and sometimes heartache.
There’s nothing better than going outside on a warm spring morning to gather incredibly fresh ingredients for breakfast. I love the feeling the warmth of a freshly-laid egg nestled in my hand and the way dew-covered herbs sparkle in the morning sun. Once the strawberries start growing, it won’t be long and I’ll be able to add fresh, sweet-tart juicy red berries to my plate. (more…)
We had a Super Bowl party at our house this year, but I just came for the food.
Well, ok, time with family was part of it too. But I really don’t see the point or attraction of football. I can think of about nine million other things to do besides watch football. Like eat yummy foods. That’s always way more fun than organized sports for me. If eating was an organized sport, I’d be its Number One Fan. I’d paint my body in team colors and have one of those big foam hands…holding a fork, probably. I would be all “Go Team!” and follow the event like it was the most important thing to ever happen in all of history. So what does this have to do with Low Carb Baked Cheesy Beef and Pepper Dip? It was my contribution to the evening’s smorgasbord of delights. And, I might add, it was a basket…or goal…or touchdown…or whatever it is you yell when your team gets a point. It was good! (more…)
Meatballs, without breadcrumbs? Can you DO that?
Why yes, yes you can! And, as I discovered today when making these easy grain free venison meatballs, you don’t actually need anything to replace breadcrumbs if you have to eat gluten free. I’ve used oats, leftover quinoa and even psyllium husk as “binders” but really, you don’t even need any kind of breadcrumb-like substance. All you need is (more…)
The other day, I had a craving for pesto.
When you need a pesto with no nuts and not cheese, should you even bother? No pine nuts. No cheese. Who does such craziness? Someone in the middle of a THM Challenge who needs a Deep S dish, that’s who. That would be me.
The good news is, I whipped up this Easy Spinach Basil Pesto in just a few minutes and it was, indeed good.
I put it on a chicken breast, fried in coconut oil.
I said Oh Sweet Mercy, this is good!

If you cook, you know how important it is to keep food from sticking, right?
Do you use parchment paper often? Does it just burn your cookies to buy something that’s just going to get tossed out? It does mine! I used to think parchment paper was just a frou-frou Martha Stewart thing, but then I tried baking on it and loved the non-stick qualities. I even reused it as long as I could, but let’s face it…it’s still paper and it’s just not going to stand up to repeated use in the oven. This means I have to buy it again, and at over $3 a roll, that can really add up to a lot of money in the trash.
What about non-stick sprays or added oils? If you’re concerned about chemicals in your life, such as this mouthful – Demethyl Silicone…or this vague description…Propellant…then you’ll certainly appreciate a product that will keep foods from sticking to your baking sheets without possibly harming you or your family. And if low-fat cooking and baking is part of your repertoire, you need something tat is truly non-stick. (more…)

These easy, baked stuffed jalapeno peppers make a great snack or party food.
One serving (two pepper halves) falls into the Fuel Pull category for you Trim Healthy Mamas out there. You could have more in an S setting.
I wanted to create something that would fit with FP, because I wasn’t very hungry but was craving something spicy (again!) so I used a combination of light cream cheese and 0% Greek yogurt. It totally satisfied my craving! I’m planning on making these to take to our Sabbath fellowship this week. (more…)
