Yesterday I made a delicious Coconut Chai Muffin in a Mug. I used a chai spice blend that I had purchased some time ago. Normally, I read labels very carefully. I don’t know why I didn’t read the label on this particular item, and wish I had before I purchased it – because I wouldn’t have bought it! I wanted to make my own chai spice blend anyway, so I… Continue Reading
It still amazes me that I can eat delicious foods like this Coconut Chai Muffin in a Mug and not be “cheating” on my diet. Although I hate to call the Trim Healthy Mama lifestyle a diet. There’s just too much food freedom going on with the Plan for it to be called that “D Word.” This Coconut Chai Muffin in a Mug is full of healthy fats and fiber…. Continue Reading
Did you like my Sriracha Deviled Eggs? Let’s not stop there! Sriracha Egg Salad is great for when you want deviled eggs but don’t want to do all the work. Let’s face it, some days that’s just too much effort. Just bein’ real, folks. Life gets busy and crazy sometimes and we’ve got to go with the flow. That’s exactly how this Sriracha Egg Salad came about, actually. I mentioned… Continue Reading
Like I mentioned in my Spicy Sour Cream Sauce post, I’m loving hot and spicy foods these days. Sriracha sauce gets liberally applied to just about anything. So why not make deviled eggs a bit more true to their namesake? Like, make them Sriracha Deviled Eggs and make them hot and spicy! I’ve recently updated this recipe, too and it’s even more amazing.
The older I get the more I’m loving spice in my foods. I mean the kind with heat. The hotter the better! My family thinks I’m getting a little loco in the cabesa but whatever. They don’t eat the spicy stuff so there’s more for me, it’s working out pretty well actually. Like this Spicy Sour Cream Sauce that I made for Taco Night this week…I didn’t really want to… Continue Reading
Have you read the ingredients on a bottle of salad dressing lately? Holy cow…since when do you need over 20 ingredients for something as simple as a vinaigrette? Yikes! Especially if some of those ingredients are artificial colorings and preservatives. No thank you. I’ll make it myself, thank you very much.
I got in trouble today with my bestie. She just happens to also be my bloggy mentor, so when she “gets on me” about something, I do my best to follow her advice. What did I do? Well, it was more what I wasn’t doing. If you use YouFood (formerly TwoGrand), you know what a great tool it is to keep track of your meals. It’s especially helpful for my Trim Healthy Mama… Continue Reading
I. Miss. Bread. Back in 2012, I went gluten free and I miss bread often. I miss being able to just make a sandwich without paying $5 for a teeny loaf of bread. Or eating a warm slice of homemade bread slathered in buttah. Then I found this recipe for a coconut flour flatbread. It kind of changed my life.
To say the humble spaghetti squash has got me all excited is an understatement. One bite of this fabulous, low carb squash and I began to envision all kinds of ways to use it. Ways to replace my former high carb favorite foods (like pasta and potatoes) so I can still enjoy comfort foods without hurting my body and feeling horrible after the glycemic payload delivered by pasta and potatoes…. So, you’ve ditched the potatoes on your low carb diet but now you’re craving hash browns with that egg fried in coconut oil. Is there anything you can substitute to satisfy that carby crave? What if I told you yes, there was indeed something you could sub for potatoes, and it was really good for you? Would you be surprised if I told you it was spaghetti squash hash browns?… Continue Reading
